Red Amaranth Kootu is a simple everyday dish prepared with red amaranth and moong dal. (You can also a mix of both moong and tur dal). Red Amaranth leaves are a storehouse of nutrients and antioxidants which help to reduce inflammation in the body. It is high in fiber and low in calories. Including greens in our diet atleast 4 times a week will be beneficial for our health. Do try this and let me know your feedback.
