After the successful attempt at Pork Sausages we thought why not try it with Beef? If you're a beef eater rather than pork you'll love these.
You'll need:
1 Kg Beef
2 1/2 Tbsp Salt or acc to preference
For the masala paste:
25-30 dry Kashmiri chillies
1 pod Garlic
1x 1 1/2" Ginger
2x 2" Cinnamon Sticks
1 tsp Cumin
1 tsp Turmeric powder
1 tsp Peppercorns
1/2 tsp Cloves
White/Red ( wine) vinegar to be used acc to requirement
Palm/coconut feni to be used acc to requirement
We always use 1:1 ratio of Vinegar and Feni.
We basically used the same Masala Paste as we did for the Pork Sausages.
The entire method is still the same. You could still smoke them but this time we opted not to.
When cooking add a little bit of oil with the sausages as the beef tends to be very dry.
The other alternative for Feni is Rum. We tried making some with a good spiced rum and they tasted awesome.
Two secret tips a Choriskaar shared with me...They add Red food colour to the Masala Paste and secondly they add beef pieces with the pork. No wonder I'd always taste a bit of beef in the Chorisam we'd buy from them 😅
