It's that time of the month! Loving the mac and cheese every month thing, guys... really, really loving it. And today, we've got a huuuge crowd pleaser -- buffalo mac and cheese!! I actually haven't had too many myself, though I LOVE buffalo chicken anything, and this was my first time making it! It came out SO good. Recipe link and what I did different below!

Instead of ground garlic and onion, I used minced garlic and grated onion! I was going to also add dijon mustard in place of the ground mustard, but I forgot! 🙃 For the chicken, I seasoned with kosher salt on both sides, smothered in Frank's Buffalo and cooked for 25 minutes at 350. Once the chicken is cool, I like to shred the chicken with my hands to get larger chunks. I also decided to top with just cheese instead of breadcrumbs, but do whatever feels right for you, and use whatever pasta makes you happy!
