Lumpiang sariwa "fresh spring roll" or "fresh lumpia", consists of minced vegetables and/or various pre-cooked meat or seafood and jicama (singkamas) as an extender, encased in a double wrapping of lettuce leaf and a yellowish egg crêpe. Egg is often used to hold the wrap together. The accompanying sauce is made from chicken or pork stock, a starch mixture, crushed roasted peanuts and fresh garlic.
Ingredients:
Lumpiang Sariwa Filling:
1/4 kl Ground Pork
1 medium Carrot (julienned)
1 Sweet Potato (julienned)
1 Turnip / Singkamas (julienned)
130 grams Baguio Beans (sliced)
100 grams Cabbage (julienned)
5 grams Wansoy (chopped)
1 medium Red Onion (sliced)
2 tbsp Garlic (minced)
1 pack Firm Tofu (sliced)
3 tbsp Fish Sauce
Pepper
1/2 cup Water
3 grams Garlic Powder
Lumpiang Sariwa Wrapper:
3/4 cup All Purpose Flour
1/4 cup Cornstarch
1 cup Fresh Milk or Water
1 tsp. Salt
3 tbsp. Oil
2 Eggs
Butter
Lumpiang Sariwa Sauce:
2 cups Water
1/2 cup Brown Sugar
2 tbsp. Soy Sauce
1/4 cup Cornstarch
pinch of Salt
Additional:
Lettuce
Peanuts (chopped)
Garlic (minced)
