To discover if ceramic knives are really a thing, we gathered 50 various steel and ceramic knives. On the high end, we have what many people call the “best ceramic knife”, the Kyocera Advanced 7”, followed by the Kitchen Empire 8” knife. On the low end, we have our Walmart checkout aisle special, the Farberware ceramic knife set. We also looked at ceramic knife sets for those looking to outfit a whole kitchen.
Our testing pitted ceramic knives against similarly-priced steel knives. The Kyocera and Kitchen Empire ceramic knives were paired with the steel Victorinox santoku, while the cheaper knives went up against the Everyday Living 7” santoku. Our ceramic sets went up against the popular Amazon Basics and ceramic-coated Cuisinart sets.

Our tests tried to simulate a year’s worth of cutting. We chopped, dulled the knives on tiles, sliced, dulled, and chopped some more. We tried the knives on carrots, rock-hard acorn squash, tricky pineapples, and delicate tomatoes. Spoiler alert: knives do not do well when intentionally dulled on ceramic tiles.
