Tomato rice- a simple, easy yet flavorful dish that you need to try out if you haven’t already.
It’s quite similar to Maharashtrian style fodnicha bhaat (I have already posted it’s reel). Same same but different.
Ingredients I used:
- 1 medium sized onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tbsp ginger garlic, grated
- 2 green chillies
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp urad dal
- 1/2 tsp chana dal
- lots of curry leaves
- around 8 cashews (optional)
- pinch of hing
- salt to taste
- 1/2 tsp turmeric
- 1 to 2 tsp red chilli powder (or as preferred)
- 1 bowl of cooked rice
- 2 tbsp coriander leaves, finely chopped
- ghee (optional but recommended)
Procedure:
- Heat oil in a pan and give tadka with all the ingredients mentioned as shown in the video.
- Add grated ginger garlic and onions and fry till it slightly changes colour.
- Add tomatoes and cook till mushy.
- Add salt turmeric and red chilli powder, and add your cooked rice. Mix well.
- Keep it covered for a couple of mins.
- Garnish it with coriander leaves.
- Add ghee before serving.
