This is an Italian Chickpea Soup Recipe.
Another name for this is Pasta E Cici, but in our house we call it Grieco Soup since my Grandma made it often.
It’s a one pot hearty soup perfect for cold winter days. I’ll leave the recipe below. Save this post for later and visit the blog for more recipes like this one.

INGREDIENTS:
* 3 tbsp olive oil
* 1 small onion diced
* 2 carrots chopped
* 3 celery stalks chopped
* 2 cloves of garlic diced
* 1 jar strained tomatoes
* 1 can of chickpeas drained and rinsed
* 1 carton of chicken or vegetable stock
* Small shell pasta
* 1 bay leaf
* Rosemary (to taste)
* Salt and pepper (to taste)
* Oregano (to taste)
METHOD:
* On medium-high heat, heat your olive oil and then sauté your garlic, onions, celery and carrots until tender
* Add your strained tomatoes, chickpeas, chicken or vegetable stock, herbs, salt and pepper
* Reduce to medium-low heat, cover and let cook until the liquid is reduced and thickens
* In a separate pot, boil some tiny shell pasta
* Drain the pasta, plate and top with your soup
