Ingredients:
1 1/2 cups dried green lentils
* Soaking the lentil is optional. In general lentils do not take that long to cook and it is easy on the stomach.
3 cups long grain rice(use rice of choice) wash rice until water is clear.
2 cups coconut milk (I used homemade)
2 cups water
3 stalk scallion
4 garlic * finely chopped( Something I should have done)
Thyme
1 Vegetable bouillon cube( optional)
1/2 tsp Sazon all purpose seasoning
Dash of dried coriander
1/2 tsp allspice
1 whole scotch bonnet
1 tsp grated ginger
Pinch of salt ( seasoned to your liking )
