Today, I'm going to show you one of my favourite soups. Broccoli and Potato Soup is a very light soup; it is tasty, rich, thick, creamy without a single drop of cream and butter. It contains a lot of vitamins C and K, folic acid, potassium and B6.
Vegan BROCCOLI and POTATO SOUP recipe - NO CREAM, NO MILK, FLOURLESS and NO BUTTER SOUP RECIPE
INGREDIENTS
5 cups of broccoli (1 large head)
2 yellow potatoes, peeled and sliced
1/2 yellow onion, sliced
2 cloves of garlic, sliced into rounds
1 tablespoon of olive oil
4 cups of vegetable broth
1 teaspoon lemon extract
1 teaspoon apple cider vinegar
1 teaspoon of Dijon mustard
salt and pepper to taste
steamed broccoli florets as garnish
How to make a delicious VEGAN potato and broccoli soup
1. To prepare this vegan soup, wash, peel the potatoes and cut them into small pieces.
2. Wash and chop the 1 large broccoli florets.
3. Peel and slice the onion and garlic into rings.
4. Pour 1 tablespoon of olive oil into a large saucepan at medium temperature.
5. Fry the onion until softened, then add the sliced garlic and cook for 2 minutes.
6. Add the broccoli and mix with salt and pepper.
7. Add the sliced potatoes; mix it all together.
8. Pour 4 cups of vegetable stock.
9. Simmer for 25 minutes or until potatoes are tender.
10. Pour 1 teaspoon apple cider vinegar and 1 teaspoon Dijon mustard while cooking.
11. While cooking, steam a few broccoli florets for garnish.
12. When the vegetables are cooked, remove the pan from the heat and let the soup cool.
13. Stir until potatoes and broccoli are well blended and creamy.
14. Serve the soup in a bowl.
15. Place the steamed broccoli florets as a garnish.
16. Enjoy!
