INGREDIENTS:
Whole30 compatible smoked salmon or sashimi grade salmon
2 Persian cucumbers
Avocado
Whole30 compatible nut cheese (we used @kitehillfoods Whole30 Approved “Chive Cream Cheese”)
Lemon (optional)
Sesame seeds (optional)
INSTRUCTIONS:
WASH your cucumber then trim the ends off.
SLICE cucumbers long ways, using a vegetable peeler or mandoline slicer.
ASSEMBLE the rolls by laying the cucumber slices down on a bamboo sushi mat, or plastic wrap and stacking one piece on top of the other.
SPREAD the cream cheese, salmon, and avocado on top of the cucumber slices, and sprinkle with lime.
ROLL the cucumbers tightly, starting from the bottom.
SLICE your roll into smaller pieces and sprinkle with sesame seeds.
