You don't even have to fight anything! You do have to pull off a horse glitch, however.
With practice you can get it VERY consistently. You'll be wrecking the early enemies, and bosses alike. Even if you don't upgrade the sword.

As of the April 19th 1.04 patch, unfortunately the horse glitch in this video no longer works.
