Moong Dal Khichdi or Green gram and Rice from Maimoona Yasmeen’s Recipes

Ingredients:
Basmati rice: 250 grams
Split green gram (moong dal): 100 grams
Onion: 1
Cooking oil: 3 tablespoons
Cinnamon (small sticks): 2
Cardamoms : 2
Black cloves: 2
Ginger garlic paste: 1 tablespoon
Turmeric powder: ½ teaspoon
Chopped coriander: a handful
Mint leaves: a handful
Whole green chillies: 4
Salt: 2 ½ teaspoons
Procedure:
1. Soak rice for about half an hour.
2. Meanwhile, to a frying pan, add split green gram or moong dal and roast till golden brown.
3. Remove moong dal from the pan, wash and soak for about 10 to 15 minutes.
4. Add oil to a cooking pan. Add sliced onion, cinnamon sticks, slit cardamoms and add black cloves. Stir fry for one minute.
5. Add ginger garlic paste and turmeric powder. Stir fry for 30 seconds.
6. Add soaked and drained rice. Stir fry for 2 minutes.
7. Add soaked and drained green gram. Mix well.
8. Add 750 ml of water. Add chopped coriander, mint leaves, whole green chillies and salt. Mix well. Close the lid.
9. Cook on medium flame till the water dries up. Simmer for about 2 minutes.
Moong Dal Khichdi is ready. Serve with kheema, khatta, khageena or tomato chutney.
