Chicken Sotanghon Soup is aFilipino dish made up of thin/glass/vermicelli noodles cooked in chicken stock with thinly slice/shredded chicken and vegetables of your choice like carrot, cabbage, mushrooms with additional earthy flavour and colour enhancement from achoite. Perfect for snacks, breakfast and best served when it's hot.
Ingredients:
2 cloves garlic
1 onion
200 grms shitake mushrooms
300 grms chicken breast, thinly slice r shredded
3 tbs fish sauce
1/2 tsp ground black pepper
chicken stock as needed
achoite or annatto seeds
salt to taste
1 chicken cube seasoning
1 small carrot
250 grms sotanghon/glass noodles
2 stalks green onion for garnish
