rice Akara (banana, rice flour, sugar, nutmeg, sometimes, baking powder, and oil for frying). With a pepper stew.
There is a spicy peppery red stew that is served with the akara, This stew is made with tomatoes, spices, tomato paste, onions, and hot peppers
Rice Acacara
3 large overripe bananas smashed
1/4 cup (up to 1/3 cup) sugar
1.5 cups of rice flour (or brown rice flour)
1/4 cup (up to 1/3 cup) sugar
1/2 tsp nutmeg
1/4 tsp baking powder
Oil for deep frying (4cups)
1. Mash banana using a fork, masher, or mixer in small bowl
2. Add sugar to mashed banana
3. Mix together the dry ingredients in medium bowl
4. Add banana to dry ingredients should be Consistency of thick pancake batter
5. Heat oil for deep frying
6. Scoop about 1 Tbsp of batter in the oil and fry for about 2 minutes they should puff up.
7. Then turn over and fry to be golden brown
Pepper
1/2 onion
2 Tbsp dried shrimp or dried powdered fish (optional)
1 hot pepper (prefer habanero or scotch bonnet)
1/2 tsp ginger
1/2 Tbsp tomato paste
1/8 - 1/4 cup oil
1 tsp salt (or more as preferred)
Black pepper to taste.
1. Blend onion, pepper, ginger
2. Heat oil and sauté the blend until onion is softened (3 minutes)
3. Add tomato paste and continue to simmer for 20 minutes until water evaporates and it looks like a fry stew.
4. Eat accara with the pepper sauce.
