Carrot Muffins topped with a delicious streusel 🤎

Ingredients
For the muffins:
2 eggs
80ml buttermilk
120g oil
90g sugar
1 tsp vanilla
240g flour
1 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp ginger
Pinch of salt
180g shredded carrots
50g walnuts
For the streusel topping:
60g flour
60g sugar
1/2 tsp cinnamon
70g cold butter
Pinch of salt
For the glaze:
4 tbsp powder sugar
1 tsp milk
1/2 tsp vanilla

Preheat the oven to 200°C.
In a medium bowl, whisk together the dry ingredients.
In a large bowl, whisk together the eggs, buttermilk , and oil. Stir the wet ingredients into the dry ingredients, then stir in the grated carrots and roasted walnuts.
Scoop the batter into the prepared pan, filling the muffin cups almost to the top.
Make the streusel by combining the flour, brown sugar, cinnamon and melted butter. Mix until crumbly.
Sprinkle the streusel evenly over each muffin.
Bake for 20 to 25 minutes, until a toothpick or cake tester inserted into the center of a muffin comes out clean.
Make the glaze by combining the powdered sugar together with the milk and vanilla extract and mix until creamy and smooth.
Drizzle over the top of the muffins.
