Mix Vegetable Kofta
Serves - 8-10
Note (20 no kofta 30 gms each)

Ingredients:

For Curry:
Oil (तेल) - 3 tbsp
Butter (मक्खन) - 3 tbsp
Bayleaf (तेज पत्ता) - 1 no
Cinnamon, 1” piece (दालचीनी) - 1 no
Cloves (लौंग) - 4-5 nos
Black cardamom (काली ईलाइची) - 1 no
Cardamom (हरि ईलाइची) - 4-5 nos
Onions, diced (प्याज़) - 3 cups
Ginger (अदरक) - a small piece
Garlic cloves (लहसुन) - 12 nos
Green chilli (हरि मिर्च) - 2 nos
Cashew nut (काजू) - 15 nos
Turmeric (हल्दी) - 1 tsp
Kashmiri chilli powder (कश्मीरी चिल्ली पाउडर) - 1 tbsp
Cumin powder (जीरा पाउडर) - 1 tbsp
Coriander, chopped (ताज़ा धनिया) - 2½ tbsp
Salt (नमक) - to taste
Tomato, diced (टमाटर) - 4½ cups
Water (पानी) - 3 cups

For Kofta Mixture:
Cabbage chopped (पत्ता गोभी) - ½ cup
Carrot grated (गाजर) - ½ cup
Beans, chopped (बींस) - ½ cup
Capsicum, chopped (शिमला मिर्च) - ½ cup
Ginger chopped (अदरक) - 2 tsp
Green chilli chopped (हरि मिर्च) - 2 nos
Coriander, chopped (ताज़ा धनिया) - handful
Potato, boiled & mashed (उबला आलू) - 1½ cups
Kasoori methi (कसूरी मेथी) - 1 tsp
Cumin (जीरा) - 1 tsp
Chilli powder (लाल मिर्ची) - 2 tsp
Garam masala (गरम मसाला) - 1 tsp
Chaat masala (चाट मसाला) - 2 tsp
Salt (नमक) - to taste
Bhuna besan (भुना बेसन) - 3 tbsp
Bread crumbs, fresh (ताज़ा ब्रेड क्रम्ब्स) - ½ cup
Oil (तेल) - to fry

For Tempering:
Butter (मक्खन) - 2 tbsp
Ginger chopped (अदरक) - 2 tsp
Green chilli chopped (हरि मिर्च) - 2 nos
Salt (नमक) - to taste
Kasoori methi powder (कसूरी मेथी पाउडर) - a pinch
Coriander, chopped (ताज़ा धनिया) - handful
Garam masala (गरम मसाला) - a pinch
Cream (क्रीम) - 3 tbsp
