Vattayappam is Kerala's own fermented steamed rice cake. One of the healthiest traditional soft and fluffy tea time snack or breakfast recipe.
INGREDIENTS:
Rice 1 cup
Jaggery ¾ cup
Water(as required) 1-2 cup
Salt 1 pinch
Yeast ½ tsp
Freshly coconut(grated) 1-2 tbs
Cardamom powder 2 pinch
Cashew nut 8-10 nos
METHOD:
1. Soak rice for 4-5 hours in water and strain water and transfer into blender to make a smooth batter by adding little water like as shown in video.
2. Take 2 tbs of soaked rice, transfer into blender to make a coarse powder to it add some water and mix nicely.
3. Take a pan, add jaggery, ½ cup water and boil it until jaggery is dissolved and keep aside.
4. In another pan, add ½ cup water, 2 tbs of diluted coarse rice mixture and boil it until it comes to thick consistency. Add this mixture to above smooth batter along with salt and mix nicely.
5. To it add yeast, mix nicely and ferment it for 4 hr or overnight.
6. After fermentation add freshly grated coconut, cardamom powder and mix it.
7. Add jaggery water and mix it and transfer into greased baking tray and place it in steamer for 10-15 until it done.
8. Before removing arrange cashew nuts on its top. Allow it rest and demould into a plate and cut it.
9. Now vattayapam is ready to serve.
