Thai Prawn & Coconut Soup Recipe (Asian Style Soup Recipe)
Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
Serves 2
Ingredients:
200g Raw Prawns
3 Mushrooms
2 Lemongrass
3 Lime Leave
3mm Galangal
1 Spring Onion
3 Stems Coriander
2 Red Chillies
1 Tbsp Fish Sauce
150ml Coconut Milk
Half of a Lime
600ml Chicken Stock/Water
Salt to your taste
Methods:
1. Slice spring onion, galangal, chillies and lime leaves.
2. Cut each mushroom into quarters and roughly chop the coriander.
3. Split lemongrass into haves.
4. Peel and de-vine the prawns if necessary.
5. Place chicken stock/water in a pan and add in the shells and heads of the prawn (if any).
6. Add lemongrass, galangal and lime leaves into the pan and bring it to the boil.
7. Reduce heat to low and cover the pan; simmer for half of an hour.
8. Transfer just the liquid into another pan, then add fish sauce, coconut milk, red chilli, the lemongrass from the other pan and salt.
9. Bring it to the boil and then add prawns, mushroom and lime juice. Cook for 1.5 - 2 minutes.
10. Transfer into a bowl, garnish with spring onion, coriander and serve.
