New Breakfast Idea - Stuffed Tomato Omelettes! INGREDIENTS👇

📝 INGREDIENTS:
2 tomatoes, sliced and seeded
1 tablespoon diced bell pepper
1 tablespoon diced onion
1 tablespoon diced zucchini
1 tablespoon corn
1 tablespoon diced carrot
2 table chopped ham
2 eggs
1 tablespoon milk
2 tablespoons butter
Yield: 6 servings
Instructions:
In a mixing bowl, add bell pepper, onion, zucchini, corn, carrot, ham, egg and milk. Mix to combine.
Heat a large frying pan over medium heat, melt butter and place tomato rings.
Pour the egg mixture into each ring, sprinkle some salt and pepper. Top each tomato-filled ring with mozzarella cheese and cover the pan with a lid until the egg has set and the cheese has melted, for about 3 minutes.
