Q - What is Sabrage?
A - Sabrage is a technique for opening a champagne bottle with a saber, used for ceremonial occasions. The wielder slides the saber along the body seam of the bottle to the lip to break the top of the neck away, leaving the neck of the bottle open and ready to pour.
Méthode Cap Classique (now referred to as Cap Classique only in SouthAfrica) is produced making use of the traditional method used in France, but in South Africa it is currently known as Méthode Cap Classique...soon simply Cap Classique.
The words fermented in the bottle can also indicate the use of this traditional method.
The traditional method is the method used in South Africa to produce Cap Classique.

#MCC is produced by making use of the traditional Méthode Traditional (used in the Champagne region in France), but in South Africa it is known as Méthode Cap Classique...or Cap Classique (from now on, simply referred to as Cap Classique).
We typically make use of Chardonnay (White Grape) and Pinot Noir (Red Grape), but a few producers also make use of Pinot Meunier (Red Grape) in South Africa.
These grapes are harvested first at every start of our annual harvest!
