SOURDOUGH RECIPE: WALNUT & OLIVE

I use my basic sourdough recipe and incorporate the filling just before the first stretch & fold.
INGREDIENTS FOR MY BASIC SOURDOUGH BREAD:
500g flour
330g water
10g salt
125g starter
FILLING: Use as much filling as you desire.
HOW TO MAKE THIS SOURDOUGH BREAD
1. Ensure you mix the water and flour half an hour before using the starter for autolysis.
2. After 30 minutes, add the salt, pressing it into the dough with your fingers.
3. Then, introduce the starter and thoroughly mix.
4. Let it rest for half an hour, spread the dough into a rectangle, add the filling, and perform the first stretch & fold.
5. Allow it to rest for another half hour, then execute another stretch & fold.
Typically, two sets are enough for me as this dough doesn't have extremely high hydration.
