One of my favourite comfort foods is anything which has potatoes in it; a simple Pakistani dish of potatoes, with the added nutty fragrance of zeera (cumin seeds), called Aloo Ki Bhujia. It is also known as Aloo Katli, Potato Curry and as my mother calls it Bujay Aloo 😁

This dish is a dry fried curry, mildly spiced and creamy and goes really well with a wet meat or veg curry.

See how I make my Aloo Bhujia.

Ingredients:

1.5kg approx of baking potatoes peeled and cut into discs
1 meduim onion finely diced
1 can of chopped tinned tomatoes blitzed to a puree
1/2 cup of oil
2 teaspoons salt
1 teaspoon coriander powder, garam masala and deghi mirch
1/2 teaspoon chilli powder and turmeric powder
1 tablespoon cumin seeds and fenugreek leaves
1 teaspoon each of ginger and garlic paste
fresh coriander to garnish
