Dry malt extract is a form of malt extract that has been reduced from its original, post-mash liquid into a very light powder, with a similar consistency as powdered sugar. Manufacturers create dry malt extract very similarly to liquid malt extract in that they boil the wort under a very powerful vacuum and evaporate all of the water out of the mixture. After further processing, what is left is the powdered sugars extracted from the malted grains.
