West Indian Goat Curry Recipe.
This is my recipe for the perfect West Indian/Caribbean style goat curry.
This is super easy, the only hard part is slicing the onions as thin as you can! This really helps the sauce to thicken, richen and melt down.
The rest is just to keep and eye on the pot and be patient...
Ingredients:
2-3 Medium White Onions
2 stalks Spring Onion/Scallion (Green part)
6-8 cloves Garlic
1 thumb-sized knob of Ginger
1.5kg Goat Meat (shoulder or leg, lamb or mutton is also good)
2 tbsp Curry Powder (west indian/carribean blend works best here)
2-3 Scotch Bonnets/Habeneros left whole
1 tsp dried Thyme
1 tsp Chilli Flakes
1tsp Ketchup
2 tbsp Soy Sauce
1 tin coconut milk
Salt & Pepper to taste
