Grilled Cheese Sandwich Recipe
Ingredients:
2 slices of sourdough or your favorite bread
2 tablespoons unsalted butter, softened
2 slices of cheddar cheese
2 slices of mozzarella cheese
4-6 slices of deli ham or turkey (optional)
1/4 cup caramelized onions
1/4 cup baby spinach or arugula
1 tablespoon Dijon mustard (optional)
1 tablespoon mayonnaise (optional)
Instructions:

Butter the Bread: Spread softened butter evenly on one side of each bread slice. This will be the outer side that will get grilled.
Layer the Ingredients: On the unbuttered side of one slice, layer the ingredients as follows: start with a slice of cheddar cheese, add the ham or turkey if using, spread the caramelized onions evenly, add the baby spinach or arugula, and top with a slice of mozzarella cheese. Place the second slice of bread on top, buttered side out.
Cooking:
Preheat a Pan: Heat a non-stick skillet or griddle over medium-low heat. You want it hot enough to toast the bread slowly, allowing the cheese to melt without burning the bread.
Grill the Sandwich: Place the sandwich in the pan. Cook until the bottom slice is golden brown and crispy, about 3-4 minutes.
Flip the Sandwich: Carefully flip the sandwich with a spatula. Press down lightly to ensure even cooking. Grill for another 3-4 minutes until the other side is golden brown and the cheese is melted.
Serve:
Remove the sandwich from the pan and let it rest for a minute.
