Hi Friends! It is almost Chinese New Year and I Hope everyone have a beautiful CNY celebration🎉! Every time after the new years celebration, I always crave something lighter and easy to digest. This Century Egg and Pork Congee is the best congee recipe that you can enjoy when you want to restore your stomach. It's also perfect for the winter time as it's very warming and the ginger also helps warming your body. I hope you give this recipe a try and I guarantee that you'll love it!! Cheers!!

Ingredients:
1 cup rice (I'm using jasmine rice, pearl rice and sushi rice are perfect too)
10 cup water (1 rice : 10 Water)
500g lean pork (shredded)
2 Century Egg （preserved duck egg)
1 piece ginger (shredded)
1 green onion (finely chopped)

Marinate:
salt 1/4 tsp
white pepper powder 1/8 tsp
potato starch 1/4 tsp
sesame oil 1 tsp
water 2-3 tbsp (keep mix in water until the mixture is moist and soft)

Seasoning for congee:
salt 3/4 tsp
white pepper powder 1/4 tsp
sesame oil 1 tsp

How to make congee?
Mix washed rice and water (1:10 ratio). Bring to boil. Reduce heat to low and cook for 30-40 minutes. Now your plain congee should be ready!
