CHOCOLATE ORANGE COOKIES
a
great combination all year round, but especially during
the festive period I've made these vegan cookies
many times now and everyone LOVES them. Honestly the best thing ever
INGREDIENTS:
65g vegan butter, coconut oil or regular butter,
melted
100g maple syrup
70g almond butter zest of 1 orange
2 tbsp orange juice (use juice from zested orange!)
155g soft light brown sugar 200g plain flour (use GF if you need)
1/2 tsp bicarbonate of soda
25g cocoa powder
pinch of salt
125g dark orange chocolate, roughly chopped
METHOD:
Heat the oven to 160c (fan assisted)/180c/gas 6.
Combine the vegan butter, maple syrup, almond butter and orange zest and juice in a mixing bowl and whisk until smooth.
3 Add the sugar, flour, bicarb, cocoa powder, salt and dark orange chocolate then mix well with a wooden spoon to bring the dough together. Cover the bowl with a tea towel and chill for 15-30 minutes.
Roll the mix into 10 equal balls between the palm of your hands, space out between two lined baking trays, then flatten slightly with your palm. Divide the remaining chocolate between the cookies and press into the top.
Bake for 15-17 minutes, or until the edges of the cookies are firm but centre is still soft. Leave to cool and firm up for 15 minutes, before topping with a little more orange zest and enjoying
