[Todays Recipe👨🏻🍳]
1. Janchiguksu
- Broth
● In a pot, bring the water to a boil over high heat.
● Once boiling, add the prepared vegetables and let it boil.
● When the broth starts to boil vigorously, add the soy sauce for soup and sea salt to season.
● Lightly beat the egg and pour it into the pot, stirring gently, then turn off the heat.
- Seasoning Soy Sauce
● In a deep bowl, combine green onion, Cheongyang chili peppers, dark soy sauce, coarse chili powder, sesame salt, brown sugar, and minced garlic. * Grind the sesame salt in a mortar and mix in.
● Add sesame oil and mix to make the seasoning soy sauce.
- Noodle Dish
1. In a pot, bring water to a boil over high heat.
2. When the water boils, add the noodles, stirring to prevent sticking, and boil for about 3 minutes and 30 seconds.
*If foam rises to cover the pot, add 1/4 cup of water. (Repeat this twice.)
3. Once the noodles are cooked, drain and rinse them vigorously in cold water to remove the starch.
4. Place the rinsed noodles in a bowl, pour the broth over them.
5. Add seasoning soy sauce and ground black pepper to finish.
2. Bibimguksu
1. Mix gochujang, vinegar, brown sugar, soy sauce, fine chili powder, and minced garlic in a bowl. Stir until the sugar dissolves to make the sauce.
2. Boil the noodles in water.
3. When the water with the noodles comes to a boil, add about half a cup of cold water.
(Repeat this process about 3 times.)
4. Once the noodles are fully cooked, drain them and then rinse vigorously in cold water to remove the starch.
5. Drain the noodles thoroughly to remove all water.
6. Place the noodles in a serving bowl and top with the sauce to taste.
7. Drizzle sesame oil over the noodles.
8. Finish by sprinkling the prepared ground sesame seeds over the Bibim-guksu.
