The rumor is still out on who started Chicken and Waffles and where it originated. Is it a Pennsylvania Dutch original, or did it rise from the streets of Harlem? No matter your side - this dish is global. Our take on this is inspired by one of our favorite joints to hear live music in Syracuse, Funk n' Waffles. They bring the fun on stage and really lay it down on the plates, as they’re slinging hot beats and hot joints. Whether you’re on the 1’s and 2’s or rocking over a stovetop, this dish is an American classic we love to make and really love to eat. This is our take on a true classic, and one of the most popular brunch and late night items in the land. We throw a little heat in it, using pure New York State maple syrup and some Sriracha to create a pure dish that will keep your heart pure. Best served with an IPA, Mimosa or Bloody Mary with your favorite people, this dish is just bloody fantastic.

🍽 Waffle Ingredients, if making your own batter (using pre-made is ok, just add a half tsp vanilla extra and a half tsp of garlic powder to it ) 🍽
- 2 eggs
- 2 cups all-purpose flour
- 1 ¾ cups milk
- ½ cup vegetable oil
- 1 tablespoon white sugar
- 4 teaspoons baking powder
- ¼ teaspoon salt
- ½ teaspoon vanilla extract
🍽 Chicken Ingredients 🍽
- 3cups of peanut or canola oil for frying
- 4 chicken thighs
- 1 cup of Flour
- 1 quart of buttermilk
- 1 Tbsp of Sriracha for chicken marinade
- 2 Tbsp of Sriracha for syrup mix
- 2 Tbsp of pickle juice
- 2 tsp Garlic powder, divided
- 3 Tbsp of cajun seasoning (divided into 2 Tbsp and 1 Tbsp)
- 1 Cup of pure NYS Maple Syrup
- 1 tsp of vanilla extract
- Dill pickle slices
- Chopped green onions

📖 Directions 📖
- Combine the Maple Syrup with 2 Tbsp of Sriracha and vanilla extract, whisk and set aside
- The night before (or at least an hour before), combine the buttermilk, 1 Tbsp of cajun seasoning, pickle juice and half of your garlic powder, whisk. Place the chicken things in the marinade and let it sit overnight
- The day of, heat up the oil to 375 degrees in a high-sided pot
- If you’re using store-bought batter, make sure it’s ready, if making your own batter from scratch, combine the eggs, milk, oil, sugar, powder, salt, vanilla, the other half of your garlic powder, and whisk up
- Heat up your waffle iron and start making the waffles (1 waffle for every piece of chicken)
- Combine the flour and remaining cajun seasoning in a pan
- Remove the chicken thighs from the marinade and coat in the flour mixture, then back into the marinade and one more time in the flour
- Drop the thighs into the oil for 3-5 minutes until perfectly golden brown, keep an eye on the temperature if you’re cooking in batches (which you should)
- Place two waffles on a plate, top with two chicken thighs, and then drench everything with the hot syrup mix
- Throw a few dill pickle slices on top, sprinkle with chopped green onions
- Turn up the heat and crunch up the funk
