GBBO S05E05 - Pies and Tarts Week - Paul Hollywood's Mini Pear Pies

Ingredients

For the rough puff pastry:

Plain flour - 200 grams/ 7 oz
Butter - 100 grams/ 3½ oz
Lard - 100 grams/ 3½ oz
Egg - 1
Granulated sugar - 2 tablespoons
Cold water - 120-150ml/ 4-5 fl oz

For the poached pears:

Water - 400 ml/ 14 fl oz
Firm Pears - 6 large
Caster sugar - 300 grams/ 10½ oz
Dry white wine - 500 ml/ 18 fl oz
Cinnamon - 2, sticks
Zest of 1 orange
