How to make Kolkata style Phirni

Kolkata-style phirni is a mildly sweet rice pudding set in earthen pots. It is creamy and is the perfect dessert to relish after a biryani or Mughlai meal.

Ingredients required:
Basmati rice - 50 gms
Full fat milk - 1 ltr
Sugar - ⅓ cup
Salt - a pinch
Saffron strands: 3 to 4
Cardamom powder - ½ tsp
Kewra water - ¼ tsp

How to make Kolkata-style phirni:
1. Wash the basmati rice once & then soak it in water for 30 mins
2. Discard the water & allow it to air dry completely. It will take 1 hour approx.
3. Pulse it for a few minutes to form a semi-coarse mixture
4. Heat full-fat milk in medium flame & add a few saffron strands. Once the milk comes to a good boil, add the rice mixture.
5. Keep stirring it continuously until it starts forming a creamy texture.
6. Now add in sugar. Mix it well. Continue stirring it again
7. Add kewra water, cardamom powder & salt. Mix it well.
8. Stir it for 2 more mins and turn off the flame.
9. Pour the phirni mix into a clay bowl.
10. Cover with aluminium foil and refrigerate for 4-6 hours
11. Serve chilled.
