The Jungle Bird was created at the Aviary Bar in Kuala Lumpur outside the golden era of tiki in 1978, making this, what I call, a post-era tiki drink. But fear not, this is 100% an easy tiki cocktail.
The Jungle Bird utilizes an ingredient not commonly found in tiki drinks, Campari. Campari is a bitter aperitif that has a polarizing following, typically you either like it or you don’t. I happen to be in the camp of not liking Campari, at least that was until I tried it in a Jungle Bird.

Jungle Bird
1.5 oz (45 ml) Black Blended Rum
3/4 oz (22.5 ml) Campari
1/2 oz (15 ml) Demerara Syrup
1/2 oz (15 ml) Lime Juice
2oz (60 ml) Pineapple Juice
Garnish: pineapple fronds and a lime wheel
