Every spring the Beemster cows rush through the barn doors to graze on the fresh spring pastures. During this period of grazing, enough milk is collected to craft only 2,000 wheels of Graskaas cheese, known for being the creamiest of the year from the Beemster Polder region in the Netherlands.
Beemster cheeses, incuding Graskaas, are made by a farmers co-operative that has been making cheeses in the canal-lined pastures of the Beemster Polder, a UNESCO World Heritage site, for over a century.
