Grilled Peach Salad with Cashew Cheese and Balsamic Tahini Dressing 💚
For the cashew cheese:
3/4 cup cashews, soaked for about 4 hours or overnight
1/4 cup water for blending
Juice of half a lemon
1/4 tsp salt
1/4 tsp mellow miso (optional, gives it a cheesy ‘funk’)
1 tsp nutritional yeast
Blend the cashews with the water until smooth. Add all the other ingredients and refrigerate for about an hour. If it is too runny, run the cashew and water mixture through a cheesecloth to help get rid of some of the moisture and thicken it up.
For the balsamic tahini dressing :
1/2 cup balsamic vinegar
4 tbsp tahini
2-3 tsp monkfruit sweetener, or any sweetener of your choice
1 garlic clove, minced (not shown in the video)
Lots of freshly ground black pepper
Other ingredients:
Any type of lettuce, about 8 cups
3 to 4 ripe peaches, cut into wedges and grilled for five minutes on each side on a grill pan or regular pan
1 cup of cherry, tomatoes, sliced
1/2 cup of red onions, sliced
1/4 cup of unsalted pistachios
Additions: 1 cup of cooked chickpeas or lentils
