Step by step on how to reverse sear a ribeye steak. This reverse seared ribeye steak is complete with a delicious garlic and herb butter.
INGREDIENTS
• 2-3 lb ribeye steak, cowboy cut (2+ inch thick, bone in)
• 1-2 tbsp blackening seasoning
• 1-2 tbsp Chef Ange Base Seasoning [ Ссылка ]
• 1-2 tsp chili powder
• 1-2 tsp smoked paprika
• 1/2 - 1 tsp ground black pepper
• 1-2 - 1 tsp kosher salt
• 10-15 garlic cloves, 5-10 crushed and finely minced & 5-7 garlic cloves whole
• a few springs fresh parsley, stems removed and finely minced
• a few sprigs of fresh herbs, rosemary, sage, & thyme
• 1-2 tbsp olive oil
• 1 stick butter
• 1-2 tsp ghee
DIRECTIONS
1. Preheat oven to 225F
0:53 2. Mix together blackening seasoning, Chef Ange Base Seasoning, chili powder, smoked paprika, salt and pepper for spice rub. Liberally coat all of the steak with the spice rub. Press the spice rub into the meat for maximum adherence.
1:52 3. Place seasoned steak on wire rack in a baking sheet and insert meat thermometer into center of steak closer to the bone. Please in oven for 45-75 min or until internal temp reaches 120F (for medium rare).
2:17 4. While steak is in oven, tie the herbs together on a stick to assemble the herb brush and make the garlic and herb butter.
3:29 5. Heat a small sauce pot over medium heat. Add olive oil and half of chopped garlic. Lightly fry garlic until light golden brown, reduce heat to medium low and add butter.
3:45 6. Melt Butter and add other half of chopped garlic. Simmer for 1-2 min or until garlic is fragrant and remove from heat.
4:23 7. Once steak hits desired internal temperature, remove steak and heat a cast iron skillet over medium high to high heat.
4:38 8. Add ghee to skillet to melt and coat and place steak in the pan for 1-2 min per side. Add whole garlic cloves to pan and use fresh herb brush to baste the seared areas of the steak with the cooking fat in the skillet. Remove steak from skillet and let rest for 10-15 minutes before slicing.
5:45 9. Reheat garlic butter if needed and add fresh chopped parsley and the chopped tips from the herb brush.
6:14 10. Slice and dress with the garlic & herb butter. Enjoy!
