The Masterbuilt Gravity Smoker isnt just a smoker it can also sear an awesome steak. Here I run a test to see the searing capabilities of the Masterbuilt 560 Gravity Series. I'd run a few low n slow and roasting style cooks on the grill, but wanted to see what the searing was like at a maximum temperature of 370c 700f, and to get some nice sear lines from the cast iron grates.
I fired up the grill with some lumpwood charcoal, and a few chunks of cherry wood. The sirloin steaks were from my mate Oliver Woolnough of Meat Matters Ltd, who is producing some stunning cuts of beef. It quickly got up to temperature, I was a bit blown away by how quickly to be honest, just over 10 minutes from first lighting. I popped the sirloins on, with a little coarse sea salt.
You will notice I used the Meater temperature probe, I wanted to make sure I nailed the temperatures of these steaks, and haven't fully tested the app yet. I'll be doing a full test and video of this soon. I had to be careful with this as it quickly reached the Meater maximum temperature, so next time will be using the Masterbuilt temperature probe, lesson learnt, usually there are cooler spots on a grill where you can position the Meater, but that wasn't the case with the Masterbuilt 560.
I was so impressed with the sear off these steaks, and it wasn't just the grill marks, there was a nice even crust on the steaks with the highlights of the sear marks, just how I like it. It's always disappointing when you sear a steak and get good sear lines, but very little colour inbetween.
The Masterbuilt smoker has no problem with searing at all, even a relatively thin steak. I'm seriously impressed with how this grill is working out. Next plans are to cook some low n slow on this grill..maybe even a brisket or two...
