Mangalore bajji chutney is very tasty and it gives a complete mouth filling feel. In this recipe, I added methi seeds. Please use small quantity , otherwise it give bitterness to the recipe. This recipe goes well with Idly, dosa, vada and all Indian breakfast recipes. The best thing about this recipe is, by adding 1 onion and 2 tomatoes, you can prepare chutney.
Ingredients:
#Oil - 2 tbspns
#Fenugreek seeds/methi - 1/4th spn
#Cumin - 1/2 spn
#Chana #dal -2 spns
#Urad dal - 1 spn
#Coriander seeds - 1 spn
Dried red #chillies - 4
Broken #garlic - 2
Chopped #onion - 1(big)
Chopped #green chillies-3
#Tamarind - #goose berry size
Chopped #tomatoes - 2(medium size)
Salt-1/2 spn
For tampering
#oil - 1 spn
#Mustard seeds - 1/4 spn
#Cumin - 1/4th spn
#Chana dal-1/4th spn
#Urad dal-1/4th spn
#Broken red chille-1
Procedure:
1) Into a medium hot pan take Oil- 2 tbspns and add Fenugreek seeds/methi - 1/4th spn, Cumin-1/2 spn, Chana dal-2 spns, Urad dal-1 spn, Coriander seeds-1 spn, Dried red chillies- 4 and fry well. Add broken garlic - 2, chopped onion - 1(big), chopped green chillies - 3, Tamarind- goose berry size, chopped tomatoes- 2(medium size) and mix well. Add Salt-1/2 spn and give a mix. Cook for 5 mins on medium flame till Tomatoes are soft.
2) Shift the mixture to a mixie jar and grind it to coarse texture and add Salt-as per taste and add Water-to adjust the consistency and grind to chutney consistency and transfer to a bowl.
3) For tampering add oil-1 spn to a medium hot tampering bowl and add Mustard seeds-1/4 spn, Cumin-1/4th spn, Chana dal-1/4th spn, Urad dal-1/4th spn, broken red chille-1 and fry for 1 min on low flame.
Tips:
- We have added water to adjust the consistency. Do not add too much water, that will spoil the chutney taste.
- If you don't have tamarind, just squeeze some lemon juice after the chutney preparation is completed. You can consume this chutney even for plain hot steamed rice.
- If any chutney is left over, please store in air tight container and keep it in fridge. You can eat this for 2 to 3 days and the taste won't change.
-Please make sure that tomatoes are cooked well, otherwise raw smell will come.
