Pilaf (or how we say "oshi palav") is a traditional dish of communities in Tajikistan recognized as a part of our cultural heritage. Otherwise, known as the "King of Meals", it is based on a recipe using vegetables, rice, meat and spices but many varieties of the dish exist.
Pilaf is delicious, but it is the notions of peace and positivity which are ingrained in it that make it such a fascinating dish.
Ingredients:
200g beef
400g rice (basmati)
130g-150g olive oil
150g chickpea (soaked overnight)
4 carrots
4 onions
1 tbsp ground cumin
1 tbsp golden raisin
1 garlic
Salt
Cooking instructions:
1. Cut meat into small pieces
2. Peel and cut onions and thinly slicing crosswise
3. Peel and cut carrots into juliennes (long thin strips)
4. Put olive oil into a pan
5. Add meat and fry until it turns golden brown, then do the same for the onions
6. Add half of the carrots and simmer (do not cover the lid)
7. Add the chickpea, cumin and pinch of salt
8. Add hot water so the meat and carrots are submerged
9. Put the whole garlic, cover and simmer for 35-40 mins on medium heat
10. Carefully remove the garlic, so it doesn't get mashed
11. Add the remaining carrots, a bit of cumin and pinch of salt
12. Rinse rice and add it to the pan, smoothing it over the meat
13. Add the golden raisin and carefully pour hot water so the rice is submerged
14. Cook until rice is tender and liquid has been absorbed
15. Put the garlic in the middle of the pan and press into the rice
16. To steam, make holes in the rice using a wooden stick or a spoon
17. Cover and leave it for 25-30 minutes in a low heat.
