Bread fraud is rampant and I am not here for it.
Something’s are just hard or are time consuming. Even with a machine to help you out. You either like it or you don’t, which is fine both ways. ️
Recipe :
Ingredients
200ml 37-40 C water
20g honey
2 tsp yeast
335g Maida
1/2 tsp salt
20ml cold pressed Sun flower oil
20g Room temperature butter
4 tsp sunflower oil
1. In a bowl, add 37-40C temperature 200ml water. Dissolve honey and yeast and let it rest covered for 15 minutes
2. The yeast will bloom
3. Add flour, salt and 20 ml oil of you choice
4. Mix everything well for 5 mins and let it rest (covered with wet cloth) for 10-15 mins
The kneading process will begin. I knead it for roughly 30-40 mins. I divide it into parts : 10 mins kneading, 5 min rest X 4
5. There are many ways to knead a dough. I hold one edge, slap it onto the surface, fold the edge I am holding, onto the other end that’s on the surface. And then sort of revolve my hand 90 degrees and repeat the process : slap, fold, spin; 🫢 This kneading is for 10 mins
6. Don’t add any flour. It will be super sticky. Just use a bench scraper
7. At the end of 10 mins, add half of your 20g butter on the dough. Pinch and knead until mixed. This should take 2 mins
8. Then repeat the Slap, fold and spin technique thing for 2 mins
9. Again, at the end of 2 mins, add rest of the butter. Mix well with dough, and Slap, fold and spin for 5 mins.
10. Take 5 min rest.
11. And Knead and Slap&Fold for 5 mins.
12. Rest 5 mins
13. We will knead for another 7-8 mins. This will include adding a tsp of neutral oil every two minutes. This will help to smoothen the dough.
14. Tuck and fold so the dough becomes smooth and add it to a bowl for it to rise for 1.5 hours or until it doubles in size
15. Punch the risen dough, divide into equal portions
16. The smaller dough : each corner has to be folded into the centre, and smoothened by the tucking motion you see in the video.
17. Oil or butter a pan. Add the small dough balls, and let it rise for 1 hour
18. Preheat the oven for 10 mins at 180 C
19. Bake the Buns for 12-15 mins in the middle rack at 180C.
20. Cool in a cooling rack, and brush on some butter
