Gua Bao
Also known as steamed buns, are exactly what you needed for your next Asian night food party. This easy recipe yields around 8 buns, so feel free to adapt the quantities to the amount you need. There is something very unique in the texture of the Bao, holding the filling so well but not overwhelming your bite. This specific Bao was introduced to Taiwan by Fuzhounese immigrants at the beginning of the 20th century. In Taiwan these buns mostly known as Taiwanese hamburgers.
Ingredients:
350 gr white flour
120 ml milk
100 ml water
30 ml vegetable oil
20 gr sugar
5 gr dry yeast
5 gr baking powder
5 gr salt
Preparation steps:
- Cut parchment paper into little squares, the size of the Bao.
- In a stand mixer’s bowl mix milk, water, sugar, and yeast. Add flour, baking powder, and oil.
- At the lowest speed, work the dough for 5 min.
- Add the salt, work for another 4 min.
- Round the dough, place in a greased bowl to rest until double in size.
- Open the dough with a rolling pin to a half cm thickness. Lightly brush the dough with vegetable oil.
- Using a cup or a small bowl cut the dough into a little circle shape.
- Fold each piece on itself and roll softly with the rolling pin.
- Place the Baos in a bamboo steamer to proof for about 30 min.
- Steam them over boiling water for 12-14 min.
- Fill them up immediately with pulled pork, cucumbers, scallions, radishes, sesame, chili, coriander, and aioli.
