Aalu Bonda Tikka Boti:
Ingredients
Tikka boti ½ packet
Onion chopped 1 cup
Ginger garlic paste 1 tbsp
Green chilies chopped 4
Peas boiled ½ cup
Turmeric powder ½ tsp
Chili powder 1 tsp
Cumin powder ½ tsp
Coriander powder ½ tsp
Allspice powder ½ tsp
Dried fenugreek ½ tsp
Lemon juice 1 tbsp
Salt 1 tsp
Oil 2 tbsp
Potatoes boiled 4
Ingredients for batter
Gram flour 1 cup
Chili powder ½ tsp
Turmeric ¼ tsp
Baking soda pinch
Salt ½ tsp
Oil for deep frying
Method
Heat 2 tbsp oil in a pan, add chopped onion, fry until soft, add ginger garlic paste, chopped green chilies, fry for 2-3 mins, add in mince meat, cook till mince turns brown, add all the dry seasonings, cook for 5 mins, now add boiled green peas, mix, add half cup water, cover and cook the mince till tender and dry, add allspice, kasuri methi, lemon juice, cook for another 2 mins, add boiled and mashed potatoes along with coriander leaves and mix everything well, remove from heat, cool, make balls with mince and aalu mixture, keep aside heat oil in a wok, make batter with gram flour, add seasonings, baking soda, mix well, dip your balls in batter, fry till light golden, serve with chatni.
Aalu Karahi:
Ingredients
Brown onion ¾ cup
Baby potatoes fried 1 kg
Oil ½ cup
Ginger garlic paste 1 tbsp
Tomato puree ¾ cup
Salt 1-½ tsp
Chili powder 1-½ tsp
Coriander powder 1-½ tsp
Black pepper powder ½ tsp
Allspice ½ tsp
Karahi masala 2 tbsp
Chicken powder 1 tsp
Water ½ cup
Coriander leaves chopped 3 tbsp
Green chilies 4 slit
Method
Heat oil in a pan, fry baby potatoes till light golden on medium flame for 10 mins, remove potatoes, add ginger garlic paste, tomato puree, all the dry seasonings, karahi masala, chicken powder and half cup water, fry well, add fried potatoes with ½ cup water, cover and cool till potatoes nicely done. Lastly add fried onions, chopped greens, remove and serve karahi with nan.
Kaju Aalu Matar Pulao:
Ingredients:
Rice soaked ½ kg
Clarified butter ¼ cup
Oil 2 tbsp
Mixed whole spices 1 tbsp
Star anise 1
Bay leaf 1
Onion 1 cup
Salt 1 ½ tsp
Green chilies 6 sliced
Tomatoes 2 sliced
Turmeric ½ tsp
Chili powder 1 tbsp
Cumin powder 1 tsp
Green Peas boiled 1 cup
Potatoes 4
Lemon juice 2 tbsp
Coriander leaves ½ cup
Mint leaves chopped ½ cup
Water as required
Cashew nuts ½ cup
Chicken powder 1 tbsp
Allspice 1 tsp
Raita to serve
Kachumber to serve
Method
Heat ghee and oil in a pan, add whole mix spices, add onion, fry till very light golden, add green chilies silted, salt, sliced tomatoes, fry till soft, add dry seasonings with 1 cup of green peas, potatoes, lemon juice, chopped coriander and mint with 1 cup water, cover and cook for 10 to 15 mins till potatoes nearly done, add soaked rice with cashew nuts, 2 cups of water, chicken powder, allspice powder, cover and cook till rice is done. Serve hot with kachumber and raita.
