[RECIPE BELOW] 3 Ingredient Cranberry Sauce.
This sauce is ICONIC to UK Christmas meals (and I'm sure many other places around the world). It's bitter but just sweet enough and goes LOVELY with many side dishes and many meats. You can't have Christmas dinner without cranberry sauce!
| The Recipe |
INGREDIENTS:
- 12oz (340g) FRESH or FROZEN Cranberries
- 3/4 cups (177ml) Water
- 1/3 cup Sweetener (I used Erythritol)
METHOD:
1. In a small pan, on low-medium heat, add all ingredients and bring to the boil.
2. Simmer for about 15-20 minutes or until the cranberries are beginning to get soft.
3. Then crush 3/4 of the cranberries with a potato masher, fork or the back of a spoon and stir.
4. LEAVE TO COOL before decanting into a jar to store in the fridge as the pectins in the fruit will help thicken the sauce.
