Healthy Banana Pancakes Recipe Yield: 7 pancakes
INGREDIENTS
2 medium bananas
1/2 cup milk
2 eggs
1 cup blended oats (or flour of your choice)
2 tsps baking powder
PREPARATION
1. In a bowl, mash the bananas using a fork. Add the milk and eggs. Whisk until smooth.
2. Add the blended oats and baking powder. Mix the batter until just combined. Don’t over-mix.
3. Heat up a non-stick pan on medium heat.
4. Dip a paper towel in vegetable oil and coat the bottom of the pan with oil.
5. Using 1/3 cup as a measure, scoop the batter onto the pan.
6. In about 2 minutes, some bubbles will appear. Flip the pancake and cook for 2 more minutes.
7. Serve warm, top with fresh bananas and drizzle with maple syrup. Enjoy!
