1 KG BEETS (WASHED CAREFULLY)
1/3 CUP FRESH LEMON JUICE
1/2 TSP SALT (OR TO TASTE)
3 HEAPING TABLESPOONS PLAIN YOGURT
1/2 CUP TAHINI
1 CLOVE OF GARLIC (CRUSHED)
- GARNISH WITH SESAME SEEDS, WALNUTS AND EXTRA VIRGIN OLIVE OIL.
* WRAP THE BEETS IN PARCHMENT PAPER, THEN IN ALUMINUM FOIL.
* COOK AT 375 F/190 C FOR ABOUT AN HOUR AND 15 MINUTES OR UNTIL FORK TENDER. IT WILL TAKE LONGER TIME TO COOK IF THE BEETS ARE LARGER SIZE.
* GRATE THE COOKED BEETS, AFTER PEELING THEM. MIX IN ALL THE OTHER INGREDIENTS AND BEET MUTABBAL IS READY.
* IF YOU PREFER A SMOOTH TEXTURE, PROCESS THE BEETS IN THE FOOD PROCESSOR, INSTAED OF GRATING THEM.
