When Shultz family farm in upstate New York started using their cows' milk to make their own cheese curd product for sale at local markets, they expected 10% of the milk from their herd would be used for their cheese. But their fresh, local product was so successful, more than a third of their milk is being used to make the product. Dr. Pete Ostrum and his fellow vets work with the Shultz family to help keep the cows healthy and advise on managing the herd.
