If you like coconut, you'll LOVE these little cakes. In Australia, the Lamington is everybody's favorite cake. Lamingtons are quite easy to make and consist of standard sponge cake dipped in a chocolate sauce and coated with dessicated coconut. They are named after Lord Lamington, who was Governor of Queensland from 1895 to 1901.
