Caldo de Pollo/ Mexican Chicken Soup Recipe
1 medium onion sliced horizontally then sliced in strips
3 - 4 stalks of celery chopped into big portions
3 - 4 carrots chopped into big portions
3 potatoes chopped into big portions
3 Corns divided into 3 pieces
2 ½ lbs of chicken of your preference
6cups of chicken broth or water season with 2 tbsps of chicken bouillon

1 tbsp of Oregano (crushed by hand)
½ of a cilantro chopped
2 cans of Tomato sauce (optional)
For serving
Salsa and lemon/lime (optional)
Fill pot with chicken broth or water and bouillon and cook on Medium/High heat. Add the oregano and cilantro and bring to a boil. Once water is boiling point, add your chicken and cook for 12 – 15 mins.
Once the chicken is cooked, add in all of your vegetables into the pot. Allow the vegetables to cook for 10 – 12 mins or until the carrots and potatoes are tender.
Serve and Enjoy!
