PORTUGUESE BEANS MY STYLE
4 cups dry beans soaked overnight
1 large onion chopped
2 tbsp garlic chopped
3 tbsp olive oil
1 link linguica cut in small cubes
7 small mini sweet peppers
1 can diced tomatoes
2 tbsp tomato paste
½ cup white wine
3 cans chicken stock
¼ cup BBQ sauce
½ cup parsley chopped
1 tsp cumin
1 tsp paprika
1 tsp chili powder
¼ tsp crushed pepper flakes
1 tbsp pepper sauce (malagueta)
½ tsp cinnamon
1 tsp baking soda
1 ½ tsp salt
In a large pot, add olive oil, onion, garlic and linguica until they are soft. Add peppers, tomato paste, diced tomatoes and wine. Let everything simmer for 2 minutes. Add spices, BBQ sauce and beans that have been soaked and rinse. Add chicken broth and baking soda. Don't be alarmed if it foams. Cover and let cook for about 45 minutes. If you need more liquid add more now. If beans are still hard let them cook until soft. Add chopped parsley.
