HOW TO MAKE SUPER JUICE! 💪🏽🍋
SERIOUSLY YOU’RE GONNA WANNA KNOW THIS IT COULD SAVE YOU TENS OF DOLLARS ON JUICE!!!!
Super juice has revolutionized my home bar and is the perfect way to minimize waste and maximize results!
It’s technique hinges on leveraging the delicious and aromatic peels of the limes for flavor and then creating a lime-strength acid solution called an “oleo citrate” with a few food-grade acids.
This method is great for cocktail aficionados and parties as it can save time, produce more juice from less limes, AND lasts wayyy longer. Like, 10 days! Awesome!
You can even take being an eco-hero a step further and save the blended peel scraps , dry them, and make lime salt. (stay tuned for a how to later)🧂
The assignment is simple, make this extra pungent, aromatic, and sustainable recipe, and PROFIT!
**For 1 Liter of super lime juice:

Start by peeling 60.1g of lime zest.

Set your peeled limes aside for later.

Put the zest into a container.

Add 39.7g of citric acid to the zest.

Add 19.9g of malic acid to the zest.

Shake it up to coat the zest. Let it sit for 2 hours.

Put the zest (along with any juices and acid from the container) into a blender and blend with 1000ml/g of water.

Juice your limes and add to your blended mixture. Stir up up.

Strain your mixture through a fine-mesh strainer into bottles.

You now have super juice!
(Freeze until ready for use for longer shelf life!)
