INGREDIENTS:
-8 large red bell peppers
-2 cloves garlic - made into paste
-1/2 cup breadcrumbs
-1/3 cup grated Parmigiano Reggiano cheese
-3 tablespoons olive oil
-1/8 teaspoon red pepper flakes
-1/2 teaspoon dried oregano
-couple tablespoons extra virgin olive oil - for finishing
INSTRUCTIONS:
1. Roast bell peppers for 60 minutes at 400f, turning occasionally.
2. Place roasted peppers in a large bowl and cover with plastic wrap for at least 15 minutes.
3. Peel the skin, and remove seeds and stems from peppers. Do not wash to clean.
4. Lay cleaned peppers on oiled baking sheet and sprinkle the seasoned breadcrumbs on top.
5. Cook the peppers for 10 minutes at 400f and if desired broil for 2 more minutes until breadcrumbs become lightly browned.
6. Drizzle extra virgin olive oil on top and grated more cheese. Enjoy!
